What is our neo-Neapolitan pizza?
Neo-Neapolitan pizza refers to a pie that takes its basic inspiration and baking process from the authentic Neapolitan pizza, but pushes the flavors and ingredients into new and exciting directions that are outside of the strict Neapolitan tradition.
Our Neo Neapolitan style dough is perfectly soft with a slight chew, proofed for a minimum of 24 hours to let the true flavour of the dough develop. We add a range of contemporary toppings and flavours to show what can be done with centuries old techniques of baking and inclusions of modern flavours can do.
We Source our ingredients and toppings locally where possible but from Italy for the products that only the Mediterranean sun can produce.
Carnevale San Marzano tomatoes
For our sauce we use the finest San marzano tomatoes. San Marzano is both a type of tomato and a region in Italy. The San Marzano tomato is a type of plum tomato, and it’s longer and thinner than the typical plum tomato you might see sold fresh in grocery stores or buy canned. They also have fewer seeds than typical plum tomatoes. They are the ideal partner for delicate creamy Dior di latte and a soft salty dough.
Caputo flour
We use a blend of a few flours to make our dough but the main component is renowned as the best Caputo 00. Italian grain milled to the finest flour you can make and direct from Naples it’s world renowned as the key to great neo Neapolitan pizza.
